I have a 2010 macbook pro running on OS X Lion (10.7.5). I bought it second hand, and it came with an internal toshiba hard drive. When trying to update to El Captain I got this notification.
But when I attempted to do that, the options button is greyed out.
(Macintosh HD doesn't have a partition tab.)
Any help would be greatly appreciated.

What happens if you erase?
Boot into Recovery (command R)
All of erase is grey as well
How about if you change the format to OS X Extended (Journaled)?
I tried to select enable journaling from the file menu, but that was grey as well.
I can't edit it from the erase tab in disk utilities either.
The mac OSX hard drive under the toshiba hard drive is in that format, but it doesn't have a partition tab.

Try changing the format to OS X extended (journaled).

Not there. Change it on the partition tab where it says Format:
Once you change that, see if you can change the partition scheme to 1 partition.
Then, click the Options button where you'll be able to set it as GUID.
It says "partition failed with the error: couldn't unmount disk."
Are you booted into Recovery when you try to reformat?
You can't format the startup disk and that's the error you'd get if you were trying to.
Can't switch to GUID partition scheme.
