Q: iPad2 is auto adding contacts to my list

My iPad has/is adding contacts to my Contacts list. If the person is already in my list, the listing will be changed to whatever (I think) the person has as their contact name. If the email was plunked under Junk or Spam, it gets listed at the bottom under the heading of #.
As you can see, I do not use last names to keep my list on a 1st name basis. The bottom shows the unknown listings. I am assuming these are Junk emails since I deleted 2 today.
I've researched options in Settings for this issue & found nothing. I'm having troubles with iCloud for a totally different issue, but have all back up / update / whatever turned off there. [fyi, my issue w/ iCloud is my deleting a folder fm there & not reading the warning that the folder would get dumped fm my machine. I'm trying to maybe hopefully recover.]
Suggestions? Please??

I'd have to check on my desktop since I don't have the option to sign out of Outlook in the Safari browser. I have no idea if it is 1 or many accounts involved.
Thanks for the interest! I'm going to write this one up to one of the many quirks popping up on my iPad. Sort of a shrug & oh well thing. I'm not going to pursue this any more. I'll just make adjustments / deletions to my contacts as needed. Thanks again!!
