Did you leave the phone sitting somewhere where someone may have picked it up and played with it? Are you absolutely 100%, bet your life and the lives of your children sure that you entered the correct passcode? Or, possibly, it was just a glitch. It happens. I watched my phone shut down and start up completely wiped back to new while I held it in my hand. No reason that I ever determined. I reloaded my back up and went about my merry way.
I back up my phone nightly with iCloud. I back it up about monthly on iTunes. I back up my pictures to DropBox and Google Photos automatically. Every now and then, I archive important text conversations to my computer using PhoneView (Mac). And I do it because sometimes, things happen.
