I use iCloud Keychain so it 'remembers' and syncs all the passwords across all my devices. However, I would like my Mac (Safari) to 'remember' a password on one particular website but not to sync it to the iCloud servers. Is it possible to do so?

No. It's an All or Nothing proposition.
If you don't want to share that password, delete, then when asked again if you want to save it, choose No. Unfortunately, you will be prompted to save repeatedly.
You could also on purpose save the wrong password, then when synced, it will not work on the other devices, but you'll have to re-enter the correct one on the Mac.
