Q: How best to organise Photos to work on OS Server?

I posted the following on the Photos forum but failed to get a response, can someone help?

I currently have the following system set up:

MacBook Pro (early 2008) running OX 10.9.5

iPhoto 8.1.2

Mac Mini Server (mid 2010) running OX 10.11.6 and OX Server 5.1.7

For reasons best known to myself I have only just got around to setting my MacMini up, and instantly upgraded it rather than going through the process of configuring the installed Snow Leopard software.  This has left some large "?" on my dock for unrecognised software so at some stage I am going to have to work out how to uninstall the server software that came with the Mini.

I want to use the server so that members of my family can access and update their own photo libraries whilst also have access to my photo library.  My intention is to break up my iPhoto Library to create a library each of their own photos.  This way I hope to reduce the size of my library and end the family frustration of waiting for access to my MacBook for them to access or upload anything.  This way I am hoping they can gain access and manage their photo libraries from whatever device they are on (we have x3 iPhone 5s an iPad 2.0 running iOS 8.4.1 and an Samsung A3).  I am happy to upgrade all devices to the latest software but need to free up space on all devices before doing so.

I intend to break up my iPhoto library before transferring any data from my MacBook Pro to the MacMini but once there to delete my iPhoto library to free much needed space on my MacBook Pro.  I do not use and have no desire to use iCloud, but currently my laptop is fully backed up to a separate Time Machine.  The intention once this is done is also to export my Music library to the MacMini once I have re-built it from when my children enabled Apple Music on it before I realised it was deleting all the CDs I had transferred over to my iTunes library.  I realised too late and have probably left it too long to retrieve a back up from my Time Machine!!!

So the question I have is simple, where on the Server should I store the photo libraries and eventually the Music library?  Is it simply to put them in a shared folder within the Server software or should I be putting them in the pictures and music folders in El Capitan?  The intention when loaded is people will be able to view their photos on TV and play the music through our sound system as well as their individual devices so there are additional benefits to what I am trying to achieve.

I have searched forums for answers to these questions but it must be so blindingly obvious that no one else seems to have posed the question!
