I've just rolled out iTunes U for my students and their main complaints are:
The page shifts up while they are typing, so they can't see what they are typing while they are typing.
When they save their work to come back to it later, they find that the text sizes and placements have changed.
When they save and hand-in their work, it often loses progress, thus not saved.
