I've been having trouble with my mac mini mid 2011 (Mac mini mid 2011 freezing after erase harddrive).
I was hoping that if I transfer EVERYTHING and run my os from an external, I might be able to resolve the issue (?).
Where do I start (including formatting new drive)?

With the external disk connected, I would boot to Recovery
About OS X Recovery - Apple Support
Using Disk Utility in Recovery Erase the external disk.
Then partition the disk with Mac OS Extended (Journaled)

Then instal OSX on the external disk via Recovery.
During initial setup you can Migrate information from the internal disk
