It may help to reset your sync data:

• On your iPhone, in the Watch app, to go: My Watch (tab) > General > Reset > tap once on Reset Sync Data.
• Nothing will appear to happen when you tap it, but the process will run in the background (invisibly to you), so allow a minute or so afterwards.

The following steps may help to avoid a recurrence:

• If you have not yet done so, update your iPhone and Apple Watch to the latest software, starting with your iPhone:
  • Update the iOS software on your iPhone, iPad, or iPod touch - Apple Support
  • Update the software on your Apple Watch - Apple Support

• Keep both Bluetooth and Wi-Fi permanently enabled on your iPhone.

• Restart both your iPhone and your watch:
  • Close all open apps on your iPhone:
    • Double-click the Home button, then swipe up on each app preview to close it.
  • Turn both devices off together, then restart your iPhone first;
    • Restart your iPhone, iPad, or iPod touch - Apple Support
    • Restart your Apple Watch - Apple Support
