Q: File Server over Fibre without Xsan?

We've been running a Mac Mini server for a long while now over ethernet on our small business network, and we recently replaced one of our video editing Mac Pros (2010 model) with a newer 2013.
The 2010 Mac Pro has a fibre card in it, and I'm wondering if it's possible to use it to replace our Mac Mini server (El Cap) and run it as a file server over the network using Fibre. Our firewall is a Sonicwall NSA 4600, which has the ability to take Fiber input connections, and then all the clients would be connected via ethernet. All our data would be on internal SSD drives, and configuring a RAID wouldn't be necessary (there are already secondary and backup solutions in place).
I have little to no experience using fibre (an outside company setup our private editing network). Before I jump down the rabbit hole, what I'm wondering is A) Does adding a machine via fibre to a network operate similar to ethernet (i.e. just setting IP, Sub, etc)? B) Do I need to configure an XSAN system with separate metadata controllers etc, or can I simply connect the mac pro into the firewall switch and share over SMB/AFP like it was connected via ethernet? And C) Can other OS X Server services such as OD, RADIUS, and VPN Server work over the Fibre connection, or would I need to run a separate Ethernet line for those to function (or even keep the Mac Mini for those functions)?
The benefit I'd be hoping to achieve is faster file transfer throughput to/from the clients.
