Buddy = those people using AIM, Jabber including Google and Yahoo IDs
Contacts = those people you use the iMessages Account to connect to - literally those people in the Contacts App whose Apple ID or iPhone number you use to connect to them.
Some of the services can have password using group chats (A group could be just two of you).
