(2) One of the selling points of the Lightning Dock is: listen to music and charge at the same time.

For your specific problem, I'd see different approaches.
1. Get a Radio/Alarm Clock with a lightning dock. That way you can listen while charging and even can use normal 3.5 inch connector headphones if required
2. Use the dock mentioned earlier (with headphone connector)
3. Search for an adapter that with multiple connections
4. Wait and see if Apple comes up with a better iphone. A year ago many customers were upset, that next generation iPhone didn't offer a smaller version. Half a year later the iPhone SE came out. If we're lucky Apple will release a future phone with headphone jack, just give them time for development and production.

No, driving is my top priority when I am driving, entertaining myself is always secondary, not so for you I guess.
