Things like that are part of a Microsoft Exchange environment. While Exchange provides an email service, it is not the same email service as what exists on the internet.
The only way to get a similar type of response on email is to embed a survey as Bob pointed out--or use an Exchange Server. In that case, I would imagine you would need to use Microsoft Outlook to tap into the special features of an Exchange server.
