I would like to know if I'll be able to buy one Iphone 7 unlocked when I go to New York in October (from 11 to 17).

Depends on demand and supply at that time. No one
can give you a definitive answer. Your best bet is to get
in line outside an Apple store a few hours before opening
and then you may get to pick from what stock they have
when/if your turn comes.
Be advised your warranty will be valid only in the US,
and 4G/LTE + other features may not be supported where
you intend to use the iPhone.
