Usually, if an app is updated, the older version vanishes - the only possibility is if you had a complete backup you did before you updated the app.

Once a developer updates an app, the previous older version vanishes!
You are left with the newest YouTube update.
If no previous backup to restore earlier app versions, then there is no way to accomplish your task.
How much free data storage space is left on your iPad?
How many apps do you leave running in the background in the iOS App Switcher?
Have you tried a hard reset of your iPad by holding down both the Home and sleep/wake buttons simultaneously until your iPad goes to black and restarts with Apple logo, then release the buttons?

And no, unless you have a backup, you cannot "downgrade" an app.
