It wasn't canceled. I only exited the mail app. It was saved I think but how do I find it back?

When you exit and app and then come back to it, it should be in exactly the state it was in when you left it. So if you exited mail, and then came back and the email was not there, it's most likely gone.
In iOS Mail, check your Drafts folder to see if you saved the email you were working on.
If nothing is in the Drafts folder, then you never saved it and will have create that email again.
To save a draft of an email in the iOS Mail app, tap the new email icon in the upper right corner to open an email draft window, start typing the email, if need to come back to finish typing an email, at a later time, tap the word Cancel and then tap Save to save an email draft into the Drafts folder.

So how does it disappear if I don't press cancel before exiting and returning to the app? It should still sit in memory.
Saved mail is put in the draft folder. If it is there click on it, then go the top and click on message, then click on send and it will bring your mail back up. Hope that works for you.
No, that doesn't work for me. I didn't press cancel before exiting the app. Still it's gone.
