How to downgrade iTunes version?

I have an older iPod touch with SW 3.1.3 and I use iTunes on my PC Windows 7. iTunes was syncing fine with my iPod before I did the iTunes software update. My iPod has the latest software update possible for it's age. Is it possible to go back to the iTunes version I had before the update so I can keep using my iPod?

The current build of iTunes should support your older device. If you're having difficulties connecting it to iTunes see this recent post: Re: iphone 6s won't connet to tunes on computer.
