I was wondering; with the arrival of Lightning EarPods, do older iPhone devices that still carry the 3,5mm jack essentially get dual audio-out ports, and could they be used to output audio simultaneously?

I wouldnt hold your breath over that one. If they'd amended features to existing iPhone models, they'd likely be listed on Apple's web site as updated specs or would have been mentioned at the keynote.
