Every time I open Photos, I get an alert which reads: 'There was a problem connecting to the server "my-server", which is another Mac on my network.
If I dismiss the dialog, Photos keeps trying to connect and it pops up again a few seconds later.
Does anyone have any idea what Photos is trying to do and how I can stop it doing it?

We do not even have any idea what software you are using or what you use "myServer" for
What versions of the OS and of Photos are you using? What is your server used for? How are you connected to it?

So, I'm using Photos.app 1.5 under El Cap 10.11.6. my-server is a HD attached to another mac on my local network (wired). If the Mac and drive aren't actually mounted, then I get this message, but I have no idea why. There are no photos on that Mac, nor are there any on the HD.
I'm guessing that Photos thinks there are photos on the other Mac, but there aren't ... so I'm wondering how to find out: what it's looking for and how to tell it to stop looking.
It could be an iCloud issue (surprised?) but I don't see how that could be happening either.
Try to delete your Photos Preferences. Perhaps the server is in some recent file list.
Remove Photos's caches in the Containers folder ~/Library/Containers/com.apple.Photos/Data/Library/Caches
