You may have the same problem I just had.  It may be something to do with drivers.  Try doing this (I found what was needed in Portable Devices by the way, also note you must find the driver manually, link to page which contains the below text, and look on that page underneath the stuff I paste below for details of how to find the driver.

If iTunes doesn't recognize your iPhone, iPad, or iPod - Apple Support

Disconnect your device from your computer.

Save a screenshot by pressing the device's Home button and Sleep/Wake button at the same time. The screen should flash briefly.

Reconnect your device to your computer.

If you see any of these sections in Device Manager, expand them:

    Imaging Devices

    Other Devices

    Portable Devices

    Universal Serial Bus Controllers

Now look for the entry that recognizes the device as a camera. You should see "Apple iPhone," "Apple iPad," or "Apple iPod." Right-click the device entry, then manually update the Apple Mobile Device USB Driver.

No real progress re my iPhone, the download failed about 2/3 of the way through and I have started it again.  But at least I now have the drivers back on my PC so fingers crossed some time tonight (or in the wee hours) I may be able to put back on my phone the last back up I did.  I guess as I'm now doing it on my laptop which does not have the last back up on it, I am stuck with restore rather than update (wasn't offered update at all)

Hooray, iPhone working again, back to 9.3.5, restored from last back up, lost books. films and music (as expected).  Not updating to 10 until tomorrow now (well today as I see it is now past midnight).

I've now read that the problems occurred to users who updated in the first hour, possibly those who were connected to power and working over the air rather than connected to PC.  Pity we can't get compensation from Apple (a free movie download perhaps) for the hassle encountered, in my case I've spent since 18.30 until midnight working to resolve this - and huge thanks to those who gave me tips, all very much appreciated and I will go back through this and give you kudos for doing that.  I dread to think how much data I used up just to get myself back to where I was at 17.59 today!!!!

So today I have easily updated iPad Pro, iPad Min and iPod Touch.  But not my phone.  An OS has downloaded (which I think may yet again be 9.3.5) and now my phone is stuck on 'waiting for iPhone' and no progress is occurring.

Anyone got any clue what I do now other than go through all the headachey stuff I had to do last night, it's taken me since 08.30 this morning to get to this stage, I spent five hours at least last night on it and although I did get my phone back, now not got it again.  Good job I'm not working today and have the time to commit to this, but what do I do now?

Restored 9.3.5 via my laptop, can't do os10 though that as I don't want to update iTunes on there in case this happens again and the restore only seems to work in the old iTunes.

PC iTunes now recognises my iPhone but I'm back to being stuck on waiting for iPhone.  This is ridiculous. Why is it such a problem to update my iPhone, it's not as if it's one of the older models, it's the last model with the highest spec.

And yet another windows update is running, not sure if that is what is preventing iTunes from working properly.

So phone bricked again, not recognised on laptop, but I've now run the drivers manually and it is, but it is now in recovery mode and is restoring so what a waste of my time this is.  I shall be back to where I started last night.

As the OS 10.1 update is now available I shall next attempt to update over the air rather than on PC, if that fails then Apple at Westfield will have one rather irate customer later this afternoon.

New update for my phone appeared when it was connected to computer, fine I thought, the lightning cannot strike twice so I said yes, update.  Wait for 2.5 Gb of download and now YET AGAIN MY PHONE IS STUCK!

So at 22.53 I have to urgently start restoring my phone again, thanks Apple, this is tedious and inconvenient.

Now trying what I did before but my phone remains with the restore notice on it and asking me to connect to iTunes.  I am livid now.  What on earth did Apple do that repeats the same error as last time for users.  And to do it last thing (in the UK) on a Sunday night with people needing their phones when going to work next day.

Resolved by a chat session with Apple.  Very helpful.  Not the same problem, something to do with drivers so once the software was extracted and the driver couldn't be connected to, the phone wasn't seen by the computer so I got the iTunes symbol and cable.  Even holding the on and off button till the apple symbol appeared and then continuing to hold just the on button didn't gain recognition, but manually navigating to the driver did the trick.

At least this did not involve a restore.
