Hi

The update is available now.

In order to download watchOS 3, you will first need to update your iPhone to iOS 10.0.1:

Update the iOS software on your iPhone, iPad, or iPod touch - Apple Support

Then update your watch:

Update the software on your Apple Watch - Apple Support
