Before iOS10 I used to read in ibooks with a small font, in portrait mode, and it was a nice single column.
With iOS10, I now have 2 shrink columns instead of one, and I can't make ibooks to render by book like before.
I just want to read novels, not a scientific paper...

I just spent time with Apple Support via Chat about this same problem. They came up with a work around that works for me - you can increase you font. In my case I had to go up 1 size.
Meanwhile, go to http://www.apple.com/feedback/ and report the issue - hopefully if enough people complain Apple will fix it.
I'm still using iOS 9, but the solution for me was to click the AA at the top of the menu in a book that lets you change the font size and I clicked "Scrolling View". That turned any my two columns into one, in both portrait and landscape mode.
I have the exact problem but in reverse. I want my larger font back with 2 columns and since iOS 10 no can do. Frustrating.
How can I get back to 1-column display?
