Q: How to change a POP account from IMAP to POP in El Capitan?

My Wife's Mini (10.11.5) has a strange Mail (9.3) problem. When we moved her to a new Mini through TimeMachine, her POP email account switched to an IMAP account. That makes for some strange behavior. We tried deleting the account completely, but every time we recreate it, the Mini forces an IMAP account. This is reflected in her iPhone 5s (ios 9 something).

How I wish the account was an IMAP to begin with.....

If you create an e-mail account, it will be silently set up as IMAP, as you've discovered.

There is a way to create a POP account, a silly one, but it works: when first setting up the account, enter a wrong password. It will fail and then let you enter more specific details, including a choice between POP and IMAP.

I told you it was silly
