Syncing issues; if I sync my iTunes over WiFi, will they play when the iPod is not on WiFi? Thank you.

The whole point of iTunes Home Sharing is to stream your iTunes content, over Wifi, to your iDevices.
This can't be done without WiFi.

If you sync, via either USB or wifi, the actual music files then you can play those files without wifi.
If you need wifi to play those they will have a cloud icon by the song.
The only difference between USB and wifi syncing is how the iPod is connected to your computer. It has nothing to do with needing wifi to play a song.
If I sync iTunes over Wi-Fi, will the songs play when the iPod is offline? My office doesn't have Wi-Fi access.
