The only way to do this is to keep paying off the remaining loan to satisfy the contract with Citizen's One Bank.
Then go this weekend and apply for the IUP as a new customer and get service. You can then drop the SIM card from the 6s into the 7 and continue.
Yes, you will have 2 loans / obligations but since you sort of own your 6s (partially) and you don't want to mess your credit up - you should continue making payments or just pay it off.
Once you pay off the 6s, you can then sell it and recover some money back.
I would not trade it in to Apple under the recycle program - they don't give you much.
I have a 6 128GB from 2 years ago that I own and will be selling it on eBay and get 100% more than what Gazelle or Apple will pay for it.
