Why don't I have the option to download iOS 10 yet?
It's been released for 2 days now, and yet I still don't the option of downloading it? What gives?

You've tapped Settings > General > Software Update ??
Since you haven't updated yet, if you have not done so, make sure to backup your iPhone prior to updating.
Via Wi-Fi. Tap Settings > General > Software Update
