Swipe from the bottom up on any screen. That should reveal the Control Center then tap AirPlay Mirroring.

Okay how do I just stream the music and not mirror the screen?
That feature is only accessible through the music app you have to start playing the music then tap just left of the pause symbol and turn on airplay. Only the music will play and the screen will not mirror.
It's unfortunate that Airplay in iOS 10 is now only 'mirroring' -I can no longer text, browse or use other apps while airplaying video.

When you swipe up from the bottom ignore the Airplay on the initial control centre. You need to swipe to the the left to bring up the music bit. There is an option there below what your playing to play on your Apple TV without mirroring.
