We just bought a 2017 Ford Escape and really like the Apple Car Play. However, while in Car Play, can you use the car's built-in GPS system? I know the simple answer would be to turn Car Play off, but then you lose the text functionality.

Like you said, the answer is no but there is a work around that few of my friends do in order to use google maps, please go through the below and the same can be done, if your car has an app with the navigation feature in it
