Dated my I watch to 3.0. I can no longer access my favorite contacts. You used to be able to do this by pressing the lower right-hand button. Where did it go?

Under watchOS 3, the Friends feature (which was available under prior versions) is no longer included and there is no direct replacement for it.
When placing calls or sending new messages, contacts can instead be selected via the Phone and Messages apps or by using Siri:
