Intend to buy Apple Watch in US and use it in Europe. Will that be an issue? Can i use only a simple 3rd party switch? Am i going to harm software or even hardware?

You will be able to use the watch in Europe.
There are no regional differences in hardware and the software can be configured for your chosen region. The supplied USB Power Adapter will have pins localised to the US. A travel adapter will enable you to plug this in to European power sockets.
Alternatively, you can buy an Apple USB Power Adapter that is localised to your destination country / countries.
