My autocapitalisation is off (Settings-General-Keyboard), but since updating, to ios10, my default setting in Numbers and Pages is to a capital letter at the start of a cell/line.
Can I stop this happening (I prefer to choose myself)?

In Pages, change some of the settings at Edit > Spelling & Grammar from Pages' menu.
The same is true for Numbers (in Numbers' menu).

On the iPad, you can turn "Check Spelling" off inside Pages as shown here. Just click the "..." in the upper right.
Numbers should have a similar setting.
