Do you know if you buy an unlocked Verizon iPhone if it can be used with a GSM carrier in the States, such as Cricket, or will it try to default to Verizon even if you don't have a plan?

The Verizon-branded iPhone if paid in full and purchased at the Apple Store will work with any carrier including Sprint (CDMA).
If the same Verizon-branded iPhone is purchased elsewhere in the US it will also work with any carrier. However, since it will be subject to the US Resellers Flex Policy it will lock to the carrier to which it is first activated unless activated with a Verizon postpaid sim.
Yes, that's the idea behind it being unlocked.
Unlocked iPhones can use sim cards from any supported GSM carrier in the world.
It may not be usable with CDMA carriers however.

There is no SIM free iPhone 7. All iPhone 7 are sold unlocked at Apple store IF you pay the full price + tax.
Sim free means it comes with no sim card inside from factory. Its free of a sim card.
Unlocked means it can take a sim card from any carrier, whether or not it as a sim card inside already from factory.
Some sim free iPhones may not be unlocked, and some unlocked iPhones may not be sim free.
