Ipad app to interactive projector

I need help to be able to run iPad apps/games on an interactive windows based projector, for a boy with Cerebral Palsy to help learn to communicate, he needs to be able to also play games on the wall. we have apps that he likes but need them projected. We also can not use wifi as it affects his Epilepsy. Help to convert games or program that allows the projector to interact with iPad would be appreciated. i.e. Games like Pocket pond (as movements keep him interested).
