To mark a segment (such as a lap) during a running workout using the built-in Workout app, you can double-tap the screen. The stats for that segment are briefly shown on the display. Segments can be reviewed after the workout via the Activity app on the paired iPhone:
You may find that a third-party app better meets your needs.
To learn about the features of third-party apps, I suggest consulting both the developers' app descriptions and their support resources. For example:

If you cannot find the specific information that you are looking for, you may wish to ask the developer directly. This is usually possible via their support resources (you may need to create a free account, in order to be able to log in). They may also be open to receiving feature requests.
