when opening AppStore I get a default e mail address which os not the correct one and impossible to overwrite it
any ideas ??

Whose email address or Apple ID does it belong to? Do you know?
YEs it is one I was using before
Then if you don't wish to use that ID anymore, you'll have to log out of the device (with that ID) completely, including Find My Device, then log in with the current one you wish to use.

but when I connect with this compute with the new address and try to update some apps it gors back automatically to the former one

I Closed the appstore with the old address and opened a new session with the other and then tried to update in vain
Settings > iCloud > Sign Out.
