I've noticed twice now this sketch "themed" typing bubble on my new phone with iOS 10, but it has appeared randomly and I don't know how it happened or how to duplicate it. It is animated and each dot is "scribbled" in sequentially.

Yes, just tested it and discovered that there are a few variations of the bubble depending on what method you are using to compose your text. The handwriting mode is what causes the "sketch" themed bubble that I was seeing. I haven't seen it yet, but apparently there is a heart or something when using the "digital touch" mode. Thanks everyone!
Could they be composing a sketch at the other end?

Well yes, of course...that's the only time it happens because its a typing bubble. By that I mean it's the indicator that lets you know the other person is typing. The point is that it's formatted different than the usual "typing" bubble which looks like this:
Does it occur when the other party to the conversation is typing their reply?

Possibly, but it would have to be by mistake because I never receive a sketch, not to mention my wife wouldn't even know how to do that. I'll have to experiment.

Maybe she "stumbled upon" it and then "ceased" an action unknown to her?
