I have erased all content in my "old" Mac Book Pro. When that happened I was trying to upgrade the OS version of El captain. I tried to recover with original disc, got OS Tiger and cannot get beyond version 10.5 of Snow Leopard.

However I have a 27" iMac with Sierra installed and wonder how I can get El captain back to my Mac Book Pro (dated 2008, I believe) so that I can at least have my two devices synchronised?

On the iMac download the El Capitan installer from the Purchased section of the Mac App Store. Using
http://liondiskmaker.com/
make a bootable USB install media. Boot the MBP from the media and install El Capitan

What I suggested is very easy.
Alternately you can connect the two Macs via FireWire
Boot the MBP in Target Disk Mode
http://support.apple.com/kb/HT1661
Download the El Capitan installer on the iMac and run the installer and install EL Capitan n the MBP's insternal drive
