Q: Itunes asking for a diferent user log on

I'm signed into my Apple account on my Iphone but when I go to the Itunes store it asks me to sign in using an old email account that is no longer active.  The account that it is asking for a log on for has now be deleted and there is no way to recover any information on that account

iPhone 6, iOS 8.3

I'm guessing there is content on the device that was purchased/downloaded with the old ID. The email doesn't have anything to do with it, that is just your Apple ID. If you have content from the Apple ID used with that email address, you will have to delete that content and download it again with the Apple ID you are using now.

How do I know which content it is that was from the old email address?  If that old email address is no longer active and the Apple account is deleted shouldn't the account just go away?

No, because the content is locked to that ID. That cannot be changed.

If it is asking for the ID, it is whatever content that is requesting to be updated. You should see that in the App Store. Or, if you have music you downloaded from iTunes, it needs authorization to play. If you right-click on your app in iTunes, and select Get Info, then File, it will show the Apple ID used to purchase the app.
