Back ups should be done regularly so that, when the unexpected bad thing happens, you already have them. If, for some reason, you want to live dangerously and not back up regularly, at least back up before doing a major system update. Lesson learned for next time.

Backups should be made before things go wrong, not attempt to make them after something has already gone wrong.
At this point, all you can do is restore the iPhone through iTunes.
Take this as a learning experience, and backup before doing an update.
