I ordered a new phone and am trying to figure out the days I will be here to pick up the phone as I do not want to do the pre-sign option (I don't trust my whole apartment complex). Under the order status, it says I will receive it between October 10th-14th. How likely is it that I receive it on the 10th vs the rest of the week? It just so happens the 10th is my one day off that week.
I'd say you have a one in five chance of getting it on 10/10. However, as the date gets closer you should receive more specific tracking information.

Apple does not send a truck to your house, it may use UPS or USPS and while they should require a signature they can sometimes overlook this detail. Use the tracking # associated with the purchase to determine the possibility of the device reaching your location in the time frame Apple suggests.
Entirely up to the accuracy of the shippers tracking information. Once it leaves Apple's contractor it is in the hands of the shipper. All Apple or anyone else knows is whatever the shippers tracking information shows.
