Welcome to the Apple Support Communities! I see from your post that you're experiencing an issue where when you set your Maps to "Satellite" view, they revert back to "Map" view every time you close & reopen the app. I know I want my map preferences to stay exactly as I left them, and I know you want the same. I will be happy to help.
I tested this on my own iPhone 6S running iOS 10.0.2, and found that when I switched to Satellite view, force-closed the app, then opened it again, it was still in Satellite view. The first thing you should try (if you haven't already) is to restart your phone. The instructions for doing so can be found here, in case you need them:
Restart your iPhone, iPad, or iPod touch
Then please go ahead and delete the Map app and then reinstall it and test it out.
Remove built-in Apple apps from the Home screen on your iOS device with iOS 10
If that doesn't resolve it, there also may be an issue with iOS itself. In my experience, the best way to test this type of issue is to back up your iPhone, then restore iOS "as new" to factory default settings and see if the issue remains. If you have no further issue with your Maps app, then restore from the previously-made backup and see if the issue returns. I will include links to articles outlining each of these processes below:
