Congratulations on the new iPhone 7 Plus. I understand from your post that you are having issues adding your email account to the iPhone. I use email on a daily basis, so I understand the concern. Let's see what we can do.
I'd like to have you force close the Settings and Mail app (if opened) then restart the iPhone and then try to add the mail account again.
