Q: How to remove period/full stop from day and month in menu bar
Since the upgrade to Sierra I have noticed that the day and the month in the menu bar now have periods (full stops) after them, e.g. "Sun." instead of "Sun". It is not possible to change this using the language and region settings. I find them annoying. Is there any other way (e.g. using Terminal) to get rid of them?

Sure. As insulting as it may be, changing your Region to NZ (for example) would fix it.
Then, click the Advanced... button and determine if the other settings (General, Dates, and Times) are acceptable. Then, check Keyboard Preferences.
Those are the only changes that ought to be affected by your chosen Region.
