Encoding Problems

Hello, first time here! I've been with this problem since El Capitan and I couldn't find a solution, so I tried here..

I am using Greek input for my first language and when I type from my Mac it seems ok.

* The problem appears when I have to use external sources, such as notes from my iPhone and text files from Windows or just some clipboard content from Safari (with Greek characters). When I open them in TextEdit, they change in some bunch of gibberish, like that " Ù¢Ì̃·Ï·ÌÈÙÔÔ˝ÎÔı¢·ƒ "

MacBook Pro (Retina, 13-inch,Early 2015), macOS Sierra (10.12), Unicode (UTF-8)

When you open such files in TextEdit, use File > Open from the app itself (not just double click on the file). Then you can choose the encoding in the Options part of the open dialogue (not Automatic). You might need to try more than one depending on the source.

Thanks for sending the file. I was not able to make sense of it and think the encoding must be corrupt or totally wrong for some reason. If you have an example in the future where you have the original Greek as well as the gibberish result, I would be happy to have another try at it.
