iPhone 5 start from beginning

I'm old and need help. I believe an icloud update took over and ruined me! Can you help me just begin again?

iPhone 5, iOS 10.0.2

Please describe the problem you're having. This is too vague to make an intelligent suggestion at this point. We could suggest that you erase all content and settings, then set it up from scratch, but if the phone has become Activation locked because it was signed into iCloud with an account for which you don't have the credentials, that may very well leave you with a useless brick.

Well, after what I think was an icloud update (really don't even want icloud); first, required password to get into the phone. Next, when I try to start, things keep popping up like voice (it's the cloud wanting to help, and I don't want it!). Several people have tried to help including me, and I'm too old to understand! I've lost my quick access to all photos, and things just are not working the way I was used to...That's why I would like to back up.....to what I can work with. Can you help?
