Hello metillman,
Thanks for asking about your Mail app crashing here in the Apple Support Communities. I understand how important it is to have all your apps working to the best of their abilities. I am happy to offer some things to check for this.
The first thing we want to ensure is that all your data on your device is safe. You can make a backup in iCloud or iTunes using this article : How to back up your iPhone, iPad, and iPod touch.
The next thing I recommend to try is to go to Settings > Mail > Accounts, choose the account or accounts you are experiencing this issue with, and delete the account. Then, since iOS 10 allows us to delete built in apps, go ahead and delete the Mail App. The reason you want to delete the account first is because when we reinstall the app and sign in to mail, we do not want to get an alert that the account is already established or signed in.
This article will assist you with removing the Mail app: Remove built-in Apple apps from the Home screen on your iOS device with iOS 10. Once that is completed, please restart your iPhone. Restart your iPhone, iPad, or iPod touch. Then, go ahead and reinstall the Mail app using that article we used to delete it.
Once it is finished reinstalling, go ahead and set up your mail account again. Test and see if it is still crashing. If it is, when you respond here, please also answer these questions:
1. How often is it crashing?
2. Does it seem to crash only in one specific area, such as at work while connected to the work wireless network, or when you are using cellular data only?
3. What type of account or accounts are set up in the Mail app that is crashing? Gmail, Yahoo, Outlook, etc.?
