Thank you for asking about your iPhone not connecting to iTunes here in the Apple Support Communities. Here in my job, I totally understand the importance of backups! I am happy to offer some things for you to check.
Did you know that you can make a backup using iCloud? Please check this help article: How to back up your iPhone, iPad, and iPod touch.
To try to get your iPhone and iTunes to connect again, please check these three articles:
1. If iTunes doesn‘t recognize your iPhone, iPad, or iPod
2. Resolve issues between iTunes and third-party security software
3. If your Windows firewall is blocking iTunes
