My sent emails are not appearing in my sent email folder despite them going through to recipients? How do I make them show up?

Sorry, but your issue has nothing to do with Apple networking. You may get better results in obtaining a potential solution if you repost to the Mac OS & System Software area of the Apple Support Communities (ASC).
However, in the mean time, if you are referring to using OS X Mail, you control what happens to sent emails for each email account that you set up in Preferences.
Mail > Preferences > Accounts > select your email account > Mailbox Behaviors tab > Sent Mailbox
