Welcome to the Apple Support Communities. I see from your post that you're experiencing an issue where your text input freezes for several seconds while you're in the middle of typing, and that it's happening on two different iOS 10 devices, and a customer's iPhone as well. Inputting text should definitely go smoothly while you're doing it, and I wouldn't want mine freezing periodically and messing up my rhythm. I am happy to help you with this.
Without knowing what troubleshooting you've already tried, I want to give you some general suggestions that could help resolve this. Be sure to test your phone or iPad after each step.
1. First, a lot of issues can be resolved simply by restarting your device. This article has details, in case you need them:

2. It's always a good idea to have a recent backup, in order to protect your personal data:

3. Reinstalling iOS will not delete any of your personal data. Even though this article's title mentions not being able to update, the steps in it can also be used to resolve this type of behavior:
If you can‘t update or restore your iPhone, iPad, or iPod touch NOTE: Please make sure you choose "Update" in step 4 (see below).
4. When you see the option to Restore or Update, choose Update. iTunes will try to reinstall iOS without erasing your data. Wait while iTunes downloads the software for your device. If the download takes more than 15 minutes and your device exits recovery mode, let the download finish, then repeat these steps.
