I would like to know, before upgrading my El Capitan on my iMac 21 into Sierra, whether my Photoshop 5.1 would work on Sierra as it works on El Capitain?

You would need to ask that in an Adobe forum if you haven't already. You also might benefit by using http://roaringapps.com/
There is but one report in RoaringApps saying Photoshop CS 5.1 works in Sierra:

You may wish to wait for more people to check in if you can't find what you need in the Adobe forums that rkaufmann recommends.
I tried in Macos Sierra beta and it was a mess, but now with the release version it works just fine.
The only thing I'm dealing now but is an issue in any program in sierra that is when you are going to save a document and you want to replace it by clicking on a existent file if you use the "icon view" you're not able to take file. I would like to thank all the above replies which encouraged me to upgrade to Sierra.
If you haven't upgraded yet, DON'T. I have Photoshop CS5 AND Illustrator CS5 and NEITHER OF THEM WORK SINCE UPGRADING TO SIERRA!!! I'm not a techie, so the thought of downgrading back to El Capitan is daunting. Can anybody help with that?
I do not know enough about downgrading, but i can now confirme that PS. CC 5.1 works very fine, for me, on Sierra. It is tyhe situation as well as with Lash CC 5.5.
