Transferring ownership
I was asked to created a numbers document for my boss and share it with him. How can I transfer ownership to him. I just want to remove it from my documents

The option crossed my mind.
If transferring ownership isn't possible, I will end up sending him the document
share via iCloud
I am not certain what "Transfer Ownership" means. a document is not owned so much as possessed. More than one person can possess a document. Document ownership is tricky and confusing with documents that can be stored in may places.
Sharing it via iCloud, with yourself recorded in the owner probably will have the results you describe—if you delete the file, then the 'collaberation' copy on iCloud is gone for everyone.
But if you follow Wayne's suggestion, and make a separate of the file to a flash drive, or email a copy to him, that copy is no longer connected with your iCloud account, and won't be affected by what's later done with the copy stored on iCloud.
That said, I'd take the cautious approach and test the process with a disposable document prior to doing it with the 'real' one.
